4-5 chicken breasts, cut into chunks
2 c. teriyaki or peanut sauce (I used a bottle of the Kikkoman teriyake sauce, then added about 1 c. brown sugar, and 1 tsp. ginger and stirred until dissolved).
I reserved a cup of the sauce to brush on the kabobs while they were on the grill and I used the rest for the marinade.)
6-7 bananas (try to get skinny ones so the bacon wraps around them easily)
15 bacon slices, sliced in half (I always like to use the center-cut bacon because it is less fatty)
3 c. chunked pineapple (fresh or canned)
15 wooden skewers, soaked in water
Marinate chicken pieces in teriyaki or peanut sauce for at least 4 hours. Cut bananas into about 4-5 pieces each. Slightly cook the bacon slices so you can pat off some of the grease, but don't cook them too long because you want them long and soft enough to wrap around the bananas. Wrap the bacon around the bananas and put them securely onto skewers with the chicken and pineapple. Grill or bake in the oven on a slotted broiling pan at 425 for 20-25 minutes or until chicken is cooked through.
